Potato Seafood Stuffed Bell Pepper

This is the dish we usually enjoy for lunch or dinner. The sweet tang of the bell pepper works well with the savory taste of the potato seafood stuffing. We do not usually eat rice with this dish as it is filling enough as it is. It works best with some roasted chicken or even grilled fish.
Ingredients:
- 3 big size pcs - Fresh Potatoes
- 1 cup - Cooked Crab Meat
- 1 cup - Shredded Cheddar Cheese
- ½ tsp - Salt
- 1 tsp - Garlic Powder
- 2 tbsps - Butter
- 2/3 cup - Milk
- 4 medium size pcs. - Bell Pepper
Procedure for Potato Seafood Stuffing:
- Peel potatoes and boil. Once cooked, remove from heat and mash.
- Add milk, butter, cooked crab meat, garlic powder and ½ cup of cheddar cheese.
Procedure for Potato Seafood Stuffed Bell Pepper:
- Cut off the top of the bell peppers and remove the seeds and inside.
- Place the bell peppers in a baking pan or baking dish. Bake for 25 minutes at 200c/375f.
- Let the bell peppers cool. Once cooled down, fill it up with the potato and seafood stuffing. Top with some grated cheddar cheese.
- Bake for 50 minutes at 225c/400f.
- Let cool and enjoy!
